Liver Cakes

A little more work than just sauteing liver with onions, but worth it.

4 servings

Ingredients:

Directions:

Combine liver and hot water.

Cover and simmer 5 minutes. Drain.

Put the liver through medium blade of food chopper.

Mix together the ground liver, onion, and egg.

Add a mixture of the flour, salt, and pepper.

Shape into round cakes and wrap a bacon slice around each.

Fasten with wooden pick.

Fry until well done.
