Pemberton Cookbook

Shepherds Pie

Steve found this version in the cafeteria of the State Corporation Commission, and we recreated it at home.

Serves 4-6

Ingredients:

• 1 lb lean ground beef
• 1 can tiny peas with pearl onions, drained
• 1/2 cup of baby carrots, cooked and drained
• 2-3 cups of mashed potatoes
• slices of butter or margarine
• small slices of cheddar cheese

Directions:

In bottom of oven proof dish, break up ground beef on bottom.

Add peas and onions and carrots.

Spread mashed potatoes over meat, spreading to corners.

Top with slices of margarine and cheese.

Bake at 350 F for 45 minutes.
